A wonderful suggestion of roasted duck with mango, accompanied by a beautiful photograph. A picture is certainly worth a thousand words.
1 roast duck leg, cut into strips
1 mango, cut into strips
1 red onion, juliened
1 spring onion, chopped
4 strips of cucumber
100g sweet turnip, juliened
1 tbsp hosin sauce
20 Kueh Pie Tee cups
Mix all the ingredients, stuff into Kueh Pie Tee cups and serve.

| (SINGAPORE) Tread carefully near the Padang during the last weekend of September. Otherwise, chances are you’ll be stepping on one of the thousands of millionaires that the city’s first Formula One race is certain to attract.
Many of them will be clients of private banks - invited to the Sept 26-28 F1 race - as their hosts vie to throw the sexiest parties with the most oomph. The competition around the circuit will be every bit as fierce and the F1 tickets are just a small part of the cost. ‘It’ll be very competitive during that period - everyone’s going for the sexiest venues. You’ve got to have glamour and prestige, you’ve got to be more creative,’ said one private banker. Standard Chartered Bank is bringing in 200 clients with many flying in from other parts of Asia, as well as the Middle East, Africa, Europe and the Americas. Said V Shankar, group head of origination and client coverage, Standard Chartered Bank: ‘The F1 is the most significant investment we have made in a client entertainment opportunity in recent times in Singapore.’ He added: ‘We will cater to the tiniest of details and ensure that our clients have a fantastic and memorable experience at the world’s first night race. We are planning on unique dinners and other opportunities for our guests to meet each other and build networks.’ Altogether, 13,000 corporate tickets costing $3,500 to $7,500 each for a seat in the Paddock Club are being snapped up by financial institutions and other major sponsors who are treating the inaugural F1 night race as a serious marketing tool. ‘There are more parallels than one might think between banking and Formula One - there is a drive for excellence in both,’ said Francois Monnet, managing director and head of private banking, South-east Asia and Australasia, Credit Suisse. Credit Suisse, first sponsor and official partner of the BMW Sauber team, is inviting an estimated 900 international guests from its private bank, investment bank and asset management divisions. The tie-up is used to convey the bank’s brand and image across its target markets. Another 300-plus grandstand tickets have also been reserved for Credit Suisse staff to purchase. ING, the major sponsor of Renault team, is hosting some 1,000 mainly private banking clients. While many of those invited are local millionaires, captains of industry and personalities, bankers told BT that they will also be flying in a fair number of clients from all over the world for the first ever F1 night race. To help some of these jetsetters feel at home, servings of Singapore’s humble kueh pie tee dish - to give a local flavour, but not too much - are being upgraded with lobster and caviar fillings. Organisers said finding exclusive and glamorous venues to host parties involved quite an effort because international clients are tough to impress. The Royal Bank of Scotland (RBS), which is a major sponsor of the Williams team, will host 400 clients to a cocktail at the old Supreme Court building where they will have a chance to get up close and personal with F1 legend and three-time world champion Jackie Stewart. Said Alan Goodyear, country executive, RBS Singapore: ‘RBS will be holding an exclusive gala cocktail at the old Supreme Court on Thursday evening before the F1 weekend to give our clients an experience of F1. The venue has been chosen because of its proximity to the F1 race track and because it is one of the iconic buildings of Singapore.’ RBS group CEO Fred Goodwin will be flying in to entertain the bank’s private and corporate clients, which include some of the top business leaders in Asia and Europe, he said. RBS, which owns RBS Coutts, one of the UK’s oldest private banks, last year bought the Netherlands’ biggest bank ABN Amro in the largest bank takeover ever in history. Singapore’s F1 will be an opportunity to bring together local and international clients and relationship managers from RBS, RBS Coutts and ABN Amro, said Mr Goodyear. OCBC Bank is the only one of the three local banks to invite about 100 lucky customers to F1. ‘We will host our top- tier customers at the prestigious F1 Paddock Club. Our guests at the OCBC dedicated Paddock Club suite will not only enjoy the food and entertainment provided by the F1 Paddock Club, they will also have VIP access to the pit area to get close to the racers and cars,’ said Koh Ching Ching, head of group corporate communications, OCBC Bank. The guest list of Singapore Telecommunications, the title sponsor of F1, runs into the hundreds, said spokesman Peter Heng. |

An Otah Popiah
June 3, 2008 on 11:47 am | By Roch | In Events, Recipes | No CommentsSo while it was all flat-lined doom and gloom at our fair in AMK, I decided to have some fun with the ingredients I had at my disposal. Why waste a good opportunity to experiment?
Have you tried an Otah Popiah? (I now hereby coin this an OP - you read it here first!)

Here I placed a freshly grilled Mackerel Otah on top of ma Popiah. And boy, was it good. L had two, MH tried and gave it the thumbs up. Even staff at 1st grade (the Otah stall) liked it. I decided to split the Popiah into half - crepe style, instead of the usual sushi portions. This gives me the ability to sink my face into my OP, and decide the chunk I want to bite off.
I also placed a slice of Otah as a topping, on a Pie Tee cup. Worked just as well.

Singapore Food Expo 2008

Congratulations to those who had enjoyed our Cup and Vegetable promotion!
It was a hectic week for us as we had to rush from AMK Hub to Singapore Expo. Normally, we would have taken just over a week to prepare for the Expo, but we only had 1 day this time - so you could imagine the amount of work cramped up into such a short time. Teamwork was important and everybody chipped in. Great job guys!
The Singapore Food Expo in May traditionally has been Singapore’s largest local food exhibition - apart from FHA, when the world will converge here. And this year is no exception. The crowd was excellent right from day one, and constant monitoring of our stock levels at the fair was required. We even had JT assigned full-time to oversee all the cooked food, and I must say, he did a wonderful job.
UC and AA were stalwarts at the stall. As they had much experience running events, my trust in them was complete.

We even had a super special deal for passion card holders - an additional $1 off for purchases of $20 and above.

Here’s a picture with a queue. Yes, I’m guilty of taking photos and not helping out.
Oh, for bargain hunters, here’s a tip. Go on the last day. And from around 5pm. Everybody will be dumping their stock. Cause we don’t want to bring anything back to the factory. While stocks lasts though - if we run out, we cannot possibly go back and get some more stock. Catch-22 situation.
The next major fairs will be at Suntec in September, followed by Expo again in November. See you there!

To be or not to be - Part Deux

We had two options actually. One in a heartland suburb, and another in a central downtown location. Plenty of excuses with both. Perhaps it’s not His time for me - yet.
LLS floated the idea of sharing L1 with me way back in March 08. Based on our excellent working relationship during our food fairs, C foresaw an opportunity where we could work out a rental sharing arrangement for the stalls she intends to take up. LLS had been really aggressive lately, with retail outlets springing up everywhere. But rental prices in choice locations command a premium (Thats why I’ve been buying REITs for the past few years), and she is not fully utilizing all the space she has. Hence, her desire to increase revenue per square foot. Totally understandable. But a from purely financial perspective.
Privately I shared with S, her main man on the project, that deep down, it cannot be just financial. There will be issues with branding, with marketing, advertising, legal representation, accounting, HR - just to mention a few. And with the range of products that LLS intends to put up at L1, they - to me, clearly have the product depth to justify taking the entire stall.
Branding is a serious issue. The stall will had to have a brand-neutral brand name, look and feel. So neither RLF nor LLS will appear at the stall. Having paid so much to build up a brand, neither party could really accept this. Not for one outlet in L1. (Unless of course, the rental and returns are totally obscene)
After much discussion with L1 and with LLS, LLS decided to pull out of a joint venture and go for it themselves.
We were disappointed. But we had no right no insist that we stick to our agreed arrangement. Firstly, we never signed anything. Secondly, S had been working day and night, meeting up with L1, negotiating rental, finalizing the merchandising mix. Besides, it was only through LLS’s contact that they managed to secure that location - right smack in front of NTUC. Darn excellent. Potential cash-cow.
Truth be told, we didn’t lift a finger. So honestly, so had no principled right to insist.
It was unfortunate. But in the long run, it would have been a better arrangement for both parties.
With our failed attempt to secure a location in a heartland-ish area, we turned our attentions to the downtown concept. RCM wanted us to take over the stall on the first week of June. That’s less than 3 weeks away. Having the right product mix together with fancy presentation will be key. We had neither and time was running out. They also required us to put 6+1months rental down - as a security deposit, excluding a $3K fitting out fee.
In short, taking up the location would have been financial suicide. Plenty of excuses.
Ideally, one would have a gourmet styled Pop/KPT with a choice of fancy toppings such as XO sausage (halal), garlic king prawns, baby octopus, smoked salmon, chicken floss etc. These will be an incremental progression from an familiar product. Bang Kwang base, the usual chilli, sweet sauces, nuts, bean sprouts, egg, Chinese lettuce, then the gourmet topping.
Then we have the real gourmet filing with Pop/KPT. Like those you can find over at our Recipes page. Thai mango salad with Duck, the KraThong Thong or a Yu Sheng filling. Plenty of things you can do.
But it’s plenty of work and lots of money down for an unknown and untested product.
Which leaves us back to square one. Perhaps it’s not my time yet. Were they smart decisions? Only time will tell.

Here’s a picture of our stall last night. Unfortunately, it was pretty quiet for us on a Saturday night.
(MH sacrificing her weekend to help out. Eternally grateful, always)
M was a little disappointed with the day’s receipts, but then again her expectations have always been high. Hopefully with the promotion, things will get better.
L will be there as well. This will make our stall one of the most well staffed. Huge support from the family.
And yes, they spelt our name wrongly. It’s Red Lips Kueh Pie Tee - with an ’s’.
